You'll need a large frying pan, a large mixing bowl, a medium mixing bowl, a large plate (for flouring) and a measuring cup.

This recipe takes about thirty minutes to prepare.

INGREDIENTS
  • 1 pound of poached Cod OR Tilapia
  • 2 tbsp dried parsley
  • 1 tbsp dried mustard
  • 1 and 3 egg whites eggs (beaten)
  • 3 tbsp mayo
  • 3/4 cup unsalted cracker crumbs
  • olive oil
  • flour
STEP BY STEP
  1. poach the fish until opaque and then flake gently to small to medium pieces
  2. combine the fish, parsley and dried mustard in a large mixing bowl
  3. cream together the eggs and mayo
  4. add the eggs and mayo mixture to the fish and mix gently
  5. add the cracker crumbs and mix well (but gently)
  6. scoop the mixture into large tablespoon sized balls and place on the floured plate
  7. heat olive oil over medium high heat
  8. put about 4 - 6 in the pan and press down with a floured fork to flatten
  9. cook until golden brown (about 1 1/2 minutes per side)
  10. set on a rack to drain

TIPS AND HINTS:
You can make these any size you like.  I like them a bit smaller, just so they're more fun ;) - I get about 20 or so.

If you choose to make big cakes, you should get about ten out of this recipe.

Be sure to flatten them enough so the inside cooks quickly enough that they don't absorb too much of the oil otherwise they're really heavy.

Also, you want your oil ready to go before you drop your first one in, again to avoid absorbing too much oil.
